Zucchini with Basil and Pine Nuts

This is one of my favorite lunches lately.  I adore basil in the summer and can eat pine nuts year-round happily.  This dish has a pesto-like taste (minus the Parm).  Tastes like a big bowl o’ summer!

Ingredients:

Shredded Zucchini

Handful of diced basil

Handful of pinenuts

Olive Oil, Salt and Pepper to Taste.
