I do love salads, but some days I want something different but equally quick to prepare for lunch.
Today’s lunch:
- Mashed avocado with shredded carrot and a bit of dill
- Celery, Cucumbers, Tomatoes, Bell Peppers and Pear
I try to keep chopped already veggies in the fridge most of the time. If I can spend half an hour washing and chopping vegetables, I’m much more likely to both eat them and serve them to my kids.
