Broccoli – Carrot – Raisin Salad

I’ve been eating this salad for a couple of years.  You can use a bag of broccoli slaw (sold with the bagged salads) or, you can be cheap like me and shred your own by using the shredder blade of the food processor.  I generally use the broccoli florets for the kids (they like them steamed) and shred the stalk for me.

  • 2 cups shredded broccoli
  • 1/2-1 cup shredded carrot
  • 1/4 c raisins (cranberries are good too)
  • 1/4 c sunflower seeds (if being truly raw, should be soaked, raw seeds)
  • Dressing : equal parts (raw) apple cider vinegar and olive oil, honey to taste

This salad keeps really well in the fridge.  I generally make two or three bowls with this recipe so I can have an easy lunch waiting.
