I’m expanding my repertoire to include portable snacks beyond fruits and vegetables. I’ve made the raw crackers and wanted something with a similar texture, but sweet. This raw granola fit the bill nicely. It is a base of sunflower seeds, almonds and walnuts, held together with a slurry of pureed pear, dates, maple syrup, vanilla, ginger, lime zest and fresh raspberries. The whole mixture is was dehydrated to give it a nice crunch.
I slightly modified a recipe from Everyday Raw by Matthew Kenney. It would be good served as a cereal with almond milk, but I really like it plain. I love the tang from the raspberries.
So very good! I halved the recipe and it still made a quart or so which is keeping quite well in the fridge. The husband really likes it and has been taking it to work for snacks. Slowly, slowly I’m converting him to a high(er) raw diet. Don’t tell him……

I loveeee granola (to the point of obsession). And yet I’ve never tried raw granola! I just wish I had a dehydrator

Don’t you love converting the Mr.? My boyfriend actually asked me, a few months ago, if I could make some extra green smoothie for him every morning, for him to bring to work. Love it!
