Raw (e)BLT

We’ve gotten eggplants in our CSA box the last few weeks.  I’ve never been a big fan of eggplants cooked – the texture is generally too spongy and/or slimy for me.  As I was perusing one of my many library raw cookbooks (that I keep renewing and renewing, one of these days I’ll have to return them, sigh) and came across a recipe for Raw Eggplant Bacon in both Everyday Raw and Ani Phyo’s Raw Food Essentials.  I tried both and much preferred Ani’s recipe.  Yes, Ani Phyo and I are on a first name basis. The Everyday Raw recipe was a bit too seasoned and salted for me.

I put the eggplant bacon on a sandwich with Ezekial 4:9 bread (not raw, but sprouted at least) with avocado, lettuce and tomatoes.  Which makes it technically an EB-L-A-T.  Think I should try to trademark that?  People everywhere will be asking for eblats.

The eggplant bacon doesn’t taste like pork bacon, but does have a smoky taste and bacon like texture after dehydrating.
